Using PB2 Natural Peanut Butter Spread in the Caesar dressing adds creaminess and protein while keeping saturated fat lower than a traditional Caesar made with mayo and egg yolks—without sacrificing flavor or texture.
Makes 8 wraps
Directions:
1. In a medium bowl, whisk together PB2 Spread, lemon juice, Dijon, anchovy paste, and garlic until smooth. Slowly drizzle in olive oil while whisking until mostly smooth.
2. Add hot water, 1 tablespoon at a time, until mixture reaches a thick, salad-dressing consistency. Season with salt and black pepper.
3. Add lettuce to a large bowl. Top with dressing and 2 tablespoons of the Parmesan, tossing until well coated.
4. Working with 1 tortilla at a time, top evenly with 1/2 cup of the dressed lettuce, about 1/3 cup of the chicken, and 1/2 tablespoon of the remaining Parmesan.
5. Fold in 2 opposite sides of tortilla, then lift the bottom side of the tortilla over the filling, tucking it tightly while rolling up tortilla. For best results, wrap tightly in parchment paper, aluminum foil, or plastic wrap. Refrigerate until ready to serve. Repeat process with remaining tortillas, dressed lettuce, chicken, and Parmesan.
