Ingredients

  • 12 oz. uncooked penne pasta (about 4 cups)
  • 1/4 cup PB2 Natural Peanut Butter Spread
  • 3 Tbsp. fresh lemon juice (about 1 small
    lemon)
  • 2 small garlic cloves, grated
  • 1 tsp. ground cumin
  • 3 Tbsp. olive oil
  • 1 tsp. kosher salt
  • Freshly ground black pepper
  • 3 Tbsp. hot water
  • 1 cup grape tomatoes, halved
  • 1 cup diced cucumber (about half of 1
    medium-size cucumber)
  • 1/3 cup thinly sliced red onion
  • 1/3 cup Kalamata olives, halved
  • 1/3 cup coarsely chopped fresh flat-leaf
    Italian parsley leaves
  • 1/3 cup coarsely chopped fresh basil

Using PB2 Natural Peanut Butter Spread in the dressing adds creaminess and plant-based protein without relying on mayonnaise or heavy dairy. 

The result is a perfectly balanced dish — tangy, nutty, and satisfying — ideal for meal prep, summer gatherings, or an easy weekday lunch. PB2 adds rich peanut flavor while keeping the dressing smooth, light, and incredibly versatile.

Makes 6 servings

Directions: 

1.            Cook pasta in well-salted water according to package directions. Drain and let cool slightly.

2.            Meanwhile, whisk together PB2 Spread, lemon juice, garlic, cumin, olive oil, salt, and pepper until smooth.

3.            Whisk in warm water, 1 tablespoon at a time, until the dressing is creamy and pourable.

4.            Add cooked pasta to a large bowl; top with tomatoes, cucumber, red onion, olives, parsley, and basil. Pour dressing over pasta mixture and toss until evenly coated. Let stand 15 minutes before serving.

Note: This pasta salad is perfectly dressed when freshly made. If you plan to store it overnight or have leftovers, be aware the pasta will continue to absorb some of the dressing. For best results, consider making a second half-batch (or full batch) of the dressing to toss in after removing from the refrigerator just before serving.
