Ingredients

  • 1 (10-oz.) bag 60% cacao dark
    chocolate chips (about 1 2/3 cups)
  • 3 Tbsp. PB2 Powdered Peanut Butter
    with Cocoa
  • 2 Tbsp. toasted pumpkin seed kernels
  • 1/4 cup sweetened dried berries
    (such as dried cranberries and blueberries)
  • Pinch of flaky sea salt

Using PB2 Powdered Peanut Butter with Cocoa in this soft-set chocolate bark adds plant-based protein and peanut flavor while keeping the texture smoother and less brittle than traditional bark. 

Makes 16 servings 

Directions:

  1.     Line a 13- x 9-inch baking sheet with parchment paper; set aside.
  2.    Place chocolate in a microwave-safe bowl. Microwave on HIGH in 30-second intervals, stirring after each interval, until fully melted (about 1 1/2 to 2 minutes.) Add PB2 Powdered Peanut Butter with Cocoa, and whisk until smooth.
  3. Pour melted chocolate mixture onto prepared baking sheet. Spread into a thin, even layer nearly to edges of pan. Working quickly, sprinkle evenly with pumpkin seed kernels, berries, and flaky sea salt.
  4. Chill bark, uncovered, in refrigerator until set, about 1 hour. Break or cut into pieces. Store bark in an airtight container in refrigerator up to 1 week.
