This Spicy Peanut Ramen Stir Fry is the perfect balance of creamy, savory, spicy, and satisfying. Made with PB2 Original Powdered Peanut Butter, the sauce clings to every noodle for a rich peanut flavor without the heaviness of traditional peanut sauces.

Directions:
- Bring a large pot of salted water to a boil. Add ramen noodles; reduce heat and simmer just until tender, about 3 minutes. Drain, rinse well with warm water, and set aside.
- In a medium bowl, whisk together PB2 Original Powdered Peanut Butter and warm water until smooth. Whisk in soy sauce, sriracha, rice vinegar, sesame oil, and salt. Set aside.
- Heat a large skillet or wok over medium heat. Add 1 tablespoon of the oil. Pour in eggs, and scramble until just set, about 2 minutes. Transfer to a plate and set aside.
- In the same skillet or wok, add remaining 1 tablespoon oil, and place over medium-high heat. Add cabbage, carrots, and bell pepper. Cook about 3 minutes, stirring frequently, until vegetables are crisp-tender.
- Rinse noodles again in warm water to loosen, as needed. Add cooked noodles and scrambled eggs to skillet. Pour PB2-soy sauce mixture over noodles. Toss everything together over medium-low heat for 1 to 2 minutes until evenly coated and heated through.
- Garnish with green onion, chopped peanuts, and a squeeze of fresh lime juice. Serve immediately.
