Ingredients

●3 (3-oz.) pkg. ramen noodles (seasoning packets discarded)

●1/2 cup PB2 Original Powdered Peanut Butter

●1/2 cup warm water

●3 tablespoons reduced-sodium soy sauce

●2 tablespoons sriracha

●2 tablespoons rice vinegar

●1 tablespoon toasted sesame oil

●1 teaspoon kosher salt

●2 tablespoons neutral-flavored oil, divided

●2 large eggs, lightly beaten

●2 cups tri-color coleslaw mix or shredded cabbage

●1 cup shredded or matchstick carrots

●1/2 red bell pepper, thinly sliced

●Garnishes: thinly sliced green onion, chopped roasted peanuts, lime wedges

This Spicy Peanut Ramen Stir Fry is the perfect balance of creamy, savory, spicy, and satisfying. Made with PB2 Original Powdered Peanut Butter, the sauce clings to every noodle for a rich peanut flavor without the heaviness of traditional peanut sauces.

Quick enough for busy weeknights and flavorful enough to crave again tomorrow.

Directions: 

  1. Bring a large pot of salted water to a boil. Add ramen noodles; reduce heat and simmer just until tender, about 3 minutes. Drain, rinse well with warm water, and set aside.
  2. In a medium bowl, whisk together PB2 Original Powdered Peanut Butter and warm water until smooth. Whisk in soy sauce, sriracha, rice vinegar, sesame oil, and salt. Set aside.
  3. Heat a large skillet or wok over medium heat. Add 1 tablespoon of the oil. Pour in eggs, and scramble until just set, about 2 minutes. Transfer to a plate and set aside.
  4. In the same skillet or wok, add remaining 1 tablespoon oil, and place over medium-high heat. Add cabbage, carrots, and bell pepper. Cook about 3 minutes, stirring frequently, until vegetables are crisp-tender.
  5. Rinse noodles again in warm water to loosen, as needed. Add cooked noodles and scrambled eggs to skillet. Pour PB2-soy sauce mixture over noodles. Toss everything together over medium-low heat for 1 to 2 minutes until evenly coated and heated through.
  6. Garnish with green onion, chopped peanuts, and a squeeze of fresh lime juice. Serve immediately.
