Ingredients

●2 tablespoons PB2 Pure Peanut
Powder

●2 tablespoons warm water

●3 tablespoons sweet chili sauce

●2 tablespoons reduced-sodium soy sauce

●1 teaspoon toasted sesame oil

●1 teaspoon grated fresh ginger or ginger paste

●1/4 teaspoon red pepper flakes

●1 tablespoon neutral-flavored cooking oil

●1 pound ground chicken

●2 teaspoons minced garlic

●1 shallot, chopped

●1/2 cup shredded or matchstick carrots

●1 tablespoon Worcestershire sauce or 1/2 teaspoon fish sauce

●1 tablespoon fresh lime juice (about half of a lime)

●1/2 teaspoon kosher salt

●1 cup cooked rice

●12 large butter lettuce leaves (from 2 heads of lettuce)

●Garnishes: sesame seeds, sliced green onions, lime wedges

Fresh, flavorful, and packed with protein, these Sweet Chili Chicken Lettuce Wraps are the perfect combination of sweet heat and crunchy goodness. Made with PB2 Pure Peanut Powder, the creamy peanut sauce adds rich roasted peanut flavor without the extra fat of traditional peanut butter. Whether you're looking for a light lunch, quick weeknight dinner, or crowd-pleasing appetizer, these lettuce wraps deliver big flavor in every bite.

  1. In a small bowl, whisk together PB2 Pure Peanut Powder and warm water until smooth. Stir in sweet chili sauce, soy sauce, sesame oil, ginger, and red pepper flakes. Set aside.
  2. Heat oil in a large skillet over medium-high heat. Add ground chicken and cook 5 to 7 minutes, stirring and breaking up meat, until cooked through. Drain well, and return to skillet.
  3. Add garlic, shallot, and carrot. Cook 5 minutes or until slightly softened, stirring occasionally.
  4. Reduce heat to medium-low. Add PB2-sweet chili sauce mixture, and stir until chicken is evenly coated and sauce slightly thickens, 2 to 3 minutes. Stir in Worcestershire sauce, lime juice and kosher salt. Remove from heat, and let cool slightly.
  5. To assemble wraps, spoon 1 tablespoon of the rice onto a lettuce leaf. Top with 1/4 cup of the chicken mixture. Garnish with sesame seeds, green onion, and a squeeze of lime, as desired. Repeat with remaining ingredients.
