Directions:
- Heat a Dutch oven over medium-high heat. Add chopped bacon, and cook, stirring occasionally, until browned and crispy, about 8 minutes. Transfer bacon to a small bowl and set aside. Reserve 1 tablespoon bacon drippings in Dutch oven. (Discard or save remaining drippings for another use.)
- Add onion, celery, carrots, and salt to drippings in Dutch oven. Cook, stirring occasionally, until onions are lightly browned and tender, about 8 minutes. Stir in garlic, Italian seasoning, and black pepper. Cook, stirring constantly, until fragrant, about 1 minute.
- Stir in chicken broth and undrained beans. Bring to a boil over high heat, stirring occasionally. Reduce heat to medium-low, and simmer until carrots are tender, about 10 minutes.
- Add PB2 Original and stir until smooth. Return to a boil; add kale, reduce heat, and simmer, stirring occasionally, until kale is wilted, about 2 minutes.
- Divide soup evenly among serving bowls, and top evenly with reserved bacon.
